I've been trying to make a pet build since the buff. My issue is pet control (and figuring out what the heck your pet is doing).
Specifically, if I attack a target and then change targets, my pet often continues to attack the old target for a long time. Further, when I trigger pet skills, I can trigger them all at once. This does not seem to translate into a pet strike incorporating all of those attacks I just clicked on. Hence I click on a skill, wait a bit, watch my pet flash green (which I think means it's using the skill) and then click another. Using this I've had a fair amount of success in 4v4, but never in ToPK.
My biggest issue with pets (and I cannot stress this enough) is pathing issues. A corner can be a nightmare, and body blocking can be worse. Further, in the case of body blocking, if I'm playing a warrior I can back up and find a way around some people. My pet just gets stuck there until they move. Now given that to run an effective pet build you really need to be running a lot of points in BM and have a lot of BM skills, you're pretty much sunk as a player when your pet gets stuck (and there's very little you can do about it).
The only real response I've found so far is to try picking another target to get the pet unstuck, but this pretty much means that playing any kind of damage spike with a pet, or using your pet to disable key players on the other team is a tricky matter.

Yes, it's the Barrier aspect that makes the build a bit oddball. I prefer Barrier to Bond though because I find that the most dangerous moments involve massive spikes of damage coming either from enemy elementalists (which Life Bond does nothing to prevent), or from Rangers using Barrage (which I've had drop me in my tracks from the redirected damage when I've used Bond). I find that the damage Bond mitigates is the sort of damage I'm usually capable of dealing with, whereas Barrier helps out with the damage that can otherwise be overwhelming.
Not to say that Bond isn't great, but I think Barrier is somewhat underestimated.

I've recently started using a M/E build for Healing and Earth (I'm pretty sure its used a hell of a lot in PvP) and I have 15 Healing Prayers, 10 Earth and 12 Divine.
I use Armor of Earth(48 armor/26% slow) and Ward vs Melee (which all the casters love at 16 secs) in addition to my other heals, and I can tank anything short of 3+Abyssals that are all knockdown spamming me.
Beyond that... its pretty nice
(I use it for FoW/UW runs since... well, that's all I'm intreested in now ^^)

WAAAAAAAAIT a second. Phoenix is a 3 second cast.
As for a strange build of my own, back in the 1st weekend I made a max fastcasting mesmer/ele that spammed stone daggers, was quite funny.

please tell me you have not yet forgot about the most orignal build of all... the W/Mo... very annoying, and they come like sheep... in flocks.

Hey, some of us are actually SMART about our W/Mo builds! Myself, I pretty much just keep Mend Ailment on, because no one else seems to bring it, and damn is it nice for blind removal.
Weird builds though? I dunno, I'ved got a N/R minions/pet build going on, but that he's still stuck in Ascalon...I was going to team up with a friend and go through everything together with her R/N, but she hasn't been on more than a couple days in the past 3 weeks or so. May just give up on waiting and start leveling that character along, because the few times we do play, he's kinda fun. Sorta weird seeing a strider leading a pack of undead, but definitely fun.
Also, for awhile I ran an Axe-based W/Me that I had a specific idea in mind, namely to throw a whole ton of conditions on one enemy, use Epidemic to transfer those conditions to everyone else, and then use "Victory is Mine!" for a massive health and energy infusion. Silly idea, but what the hell why not, eh? Well, because A. Until I got to the Shiverpeaks and capped "Victory...!" I didn't need epidemic, so I didn't bother with any other mesmer skills either, and B. In the time it takes to drop that many conditions on a target, I either wouldn't have enough energy for Epidemic or I could have killed the baddies outright. So as it was he was a solid enough tank, but boring and not really very fun after I got him through ascension. So, he got nuked to make way for my Mesmer.
